History of Sasazushi

Successive Sasazushi Owners

First Generation, Toride Tokuro
Born in the fourth year of Ansei (1857) in Mie Prefecture.
Moved to Tokyo at the age of 17 and worked as a delivery waiter at "Yobee Sushi".
Gained recognition from senior colleagues, became independent, and opened a "sushi stall" in Otemachi from Kuromoncho.
It is believed to be around the 13th year of Meiji (1880), but the exact start date of the stall is uncertain.
At this time, the business operated under the name "Sasazushi" and did not have a fixed store location.

Second Generation, Toride Masaichi
Born in the 18th year of Meiji (1885) in Tokyo Nihonbashi Ward (now Chuo Ward, Nihonbashi).
Trained at "Misa no Sushi" in Asakusa.
After his father Kyuuro passed away, founded "Sasazushi" in the 36th year of Meiji (1903) in Nihonbashi Ward.
This marked the establishment of the first fixed store location.

Third Generation, Toride Kyoji
Born in the 40th year of Meiji (1907).
Left his older brother Seiichi's place to open the future "Sasazushi" in Nihonbashi in the 9th year of Showa (1934).
Moved to "Kanda" in the 23rd year of Showa.

Fourth Generation, Toride Ichiro
Born in the 11th year of Showa (1936).
By the time he turned twenty, he had become a skilled artisan and was assisting his father Kousuke, eventually taking over the business.
During the 30s and 40s of Showa, he managed Kanda Sasazushi with a group of four or five young workers living together.

Fifth Generation, Toride Ryuji (Current Owner)
Born in the 45th year of Showa (1970).
Trained at a Japanese restaurant for three years and continued to refine his skills over the next two years.
